Best Ever Banana Bread (or Muffins)

This recipe is incredible…it may even be life changing.

Growing up I never really liked fruit or veggie breads…not banana bread, not zucchini bread, not carrot cake…none of it.  There was always something about the texture and sweetness that bugged me.  A few years ago my mom found a recipe while watching the Food Network that she decided to try out…Bobby Flay’s Espresso-Chocolate Chip Banana Bread.  She actually made it that day after watching that show and the results were amazing.  This recipe is based on that but altered slightly to my tastes.  I’ve made this numerous times for multiple people and everyone has devoured it.  It is a pretty easy recipe for that well of a reception.

The original recipe was intended as bread but more often than not I make it as muffins.

Birthday Cheesecake!

Growing up, sometimes for birthdays or special occasions my mom would make a very special Chocolate Chip Cheesecake.  This was the only cheesecake I would willingly eat until I was probably in high school (lets be honest, maybe later than high school).  It is delicious and amazing and whatever other words for awesome that you can think of.  She would make it maybe once a year, probably less often then that.

Weeknight Balsamic Chicken and Veggies

I really like chicken.  It’s pretty easy and simple and can be prepared in so many different ways.  I like this chicken dish because it packs a whole lot of flavor and it’s very quick and simple to prepare which makes it easy for busy weeknights.  It also makes for a quick cleanup since only a few dishes are used.

This is also one of my favorite dinners to make before our crazy evening gym program.  It’s full of protein and veggies with an added bit of potatoes which help to keep us energized during our intense workout sessions.

Mmm, minestrone.

I like soup. I like soup a lot.  As far as I’m concerned there isn’t much better than a nice bowl of homemade soup.  This minestrone is easy to prepare and sits all day in the slow cooker which makes for a very welcoming greeting when you get home after a long day.  It’s also full of veggies and beans.

Easy Spaghetti

Mmm…Spaghetti.  Who doesn’t love spaghetti.  Growing up my mom always made homemade spaghetti sauce.  While it may not be super fancy it is delicious and I still love it.  We never had jared sauce in the house and I didn’t realize that people used spaghetti sauce from a jar until I was probably in high school; it was just unheard of in our house.

This is the first dish I ever learned how to make from my mom. This quick and easy homemade spaghetti sauce is great when you need comfort food and the leftovers are perfect for lasagna.

Egg Cups

Growing up, I was never a breakfast person.  In fact, until the last couple of years, I didn’t care for breakfast foods much at all.  Perhaps it’s just a part of growing up but I have realized that having a decent breakfast in the morning really does make for a better day. I like these simple egg cups because they are quick and easy to prepare and contain lots of protein and veggies to start the day off well.
