Mmm, minestrone.

I like soup. I like soup a lot.  As far as I’m concerned there isn’t much better than a nice bowl of homemade soup.  This minestrone is easy to prepare and sits all day in the slow cooker which makes for a very welcoming greeting when you get home after a long day.  It’s also full of veggies and beans.

Easy Spaghetti

Mmm…Spaghetti.  Who doesn’t love spaghetti.  Growing up my mom always made homemade spaghetti sauce.  While it may not be super fancy it is delicious and I still love it.  We never had jared sauce in the house and I didn’t realize that people used spaghetti sauce from a jar until I was probably in high school; it was just unheard of in our house.

This is the first dish I ever learned how to make from my mom. This quick and easy homemade spaghetti sauce is great when you need comfort food and the leftovers are perfect for lasagna.

Stock Show Parade!

Cows running down the streets of downtown Denver? How awesome is that!?

Until this year I had never gone to the Stock Show Parade.  Growing up, every year we would go to the National Western Stock Show.  My brother’s (John) birthday is in the middle of January so we would always go for his birthday.  But I had never gone to the parade; in fact, I didn’t even know that there was a parade until a few years ago when my friend Katie went and told me about it.

We May Have Lost Our Minds

So…New Year and new goals and whatnot.  Last year I gained a really unnecessary amount of weight due to a combination of things.  With the end of the holiday season and the start of the new year I decided that I really need to get my butt in gear and get back into the gym.  As you can see from the photo above, this is clearly something that needs to be done; look at those chipmunk cheeks!

Egg Cups

Growing up, I was never a breakfast person.  In fact, until the last couple of years, I didn’t care for breakfast foods much at all.  Perhaps it’s just a part of growing up but I have realized that having a decent breakfast in the morning really does make for a better day. I like these simple egg cups because they are quick and easy to prepare and contain lots of protein and veggies to start the day off well.
